
To tell you the truth, I've always wanted to jam but I was afraid of the whole canning process. Then I discovered Refrigerator Jam and my whole life changed. We use the spread on everything from yogurt,toast,ice cream,and milk. I like to cook it down until it's pretty thick to a fruit butter consistency. The butter/jam will last in the fridge for about two weeks (if it lasts that long). I prepared my jars in the dishwasher. Super Easy, just wash the jars in the dishwasher and then leave them there until you are ready to fill them with the jam.
Strawberry Butter Ingredients: 4 cups of Strawberries Rinsed and Hulled and 1/4 cup of Sugar Yields 2 8oz Jam Jars
Directions: 1. Add the Strawberries and Sugar to a non-reactive pot (I used a dutch oven). 2. Stir well and let the berries sit for 30 minutes or until they start to macerate. 3. Cook Pot over medium low heat, stirring regularly until the strawberries start to break down. 4. Then reduce heat to low and let simmer stirring regularly for about an hour. The butter should reduce to half of the original volume. 5. Add the Strawberry Butter to prepared jars and store in the fridge or freezer and ENJOY!
