Apple Cake
One of the best things about Fall the Northeast is Apple Picking! This year we went to an orchard in Warwick, NY- Applewood Orchards & Winery. The orchard was super family friendly and still had a good amount of apples left. And since it is attached to a winery, quite a few pickers boozing whilst apple picking. They also have a tractor ride that takes you to a pick your own pumpkin patch. This can be pretty muddy so I recommend that you all wear boots. There is a concession stand, ice cream, and wood fire pizza (but this is in the tasting room area). The only drawback was that they the bathrooms are porta potties. The apple trees there are low enough that even the smallest member of your family can get in on the fun!
Making it almost impossible not to come home with out a ton of apples. Which is a good enough excuse (not that you need a excuse) to make apple cake. I got this recipe from an old friend's mom and I've been making it for the past 10 years. It by far my husband's favorite dessert.
Apple Cake
Ingredients:
Cake- 1 Cup of Sugar
2 Cups of Flour
1 Teaspoon of Baking Soda
1 Tablespoon of Cinnamon
1 Tablespoon of Vanilla
7/8 Cup of Vegetable Oil
3 Eggs
6 Medium to Large Apples (pared and sliced)
Topping-
1/2 Cup of Flour
1/2 Cup of Dark Brown Sugar
1/4 Cup of Room Temperature Butter (cut into small pieces for blending)
1 Tablespoon of Cinnamon
Directions: Preheat oven to 350 degrees. Mix together the first 8 ingredients for the cake, then stir in sliced apples. Pour/spoon cake batter into greased 9x13 pan. Top cake with the brown sugar mixture. Then bake at 350 degrees for about an hour or until knife inserted into the center comes out clean. This cake will keep at room temperature for about 2 days then will need to be moved to the fridge. Enjoy!
